Welcome to my first meal plan post! I’m so excited to launch this and I really hope you find this information valuable. Meal planning, shopping, prepping, cooking, eating, cleaning, etc. is such a huge time commitment, so I’m hoping that by taking part of the load off your plate you can enjoy the other aspects of feeding yourself at home. This week’s meal plan is focused on flavorful, satisfying meals that incorporate some good veggies.
I have put together 4 dinner recipes, 2 breakfast recipes, and 1 lunch recipe that you can use all week long. What saves me time and time again is using up leftovers to reduce food waste, which is also very convenient since I don’t want to cook every night of the week.
Here’s what’s on the menu this week:
Bacon Gruyere Egg Bites
Crunchy Baked Beef Tacos
Texas Migas
Copycat Chick-fil-A Market Salad
Pot Roast with Carrots and Potatoes
Stuffed Poblano Skillet
Greek Couscous Salad
ALSO I went ahead and made an Instagram account dedicated to the meal plans. It’s been such a fun way to engage to get feedback about what you need to make your time in the kitchen easier. Over the weekend I asked if you’re more so looking for 1) convenience/easy recipes 2) affordable meals 3) a variety of foods/ingredients. The overwhelming response was convenience/easy then affordability with a little bit of variety. I can relate to all of that, so I will keep that in mind too for future meal plans! Be sure to follow me at feedingyourselfathome on Instagram so you don’t miss out!
xo, Kate
